6 Jalapenos Large
1 Pound Cream Cheese (softened)
1 Lime
1 Tbl Jerk Seasoning
6 Pieces of Cooked and Crispy Bacon

First put out the cream cheese and let soften.

When working with Jalapenos, you want to make sure to always have gloves on and even a painting mask makes an accidental splashing better. Slice the Jalapenos in half and using a spoon, scrape out all of the seeds and white membrane until all that is left is the green of the jalapeno. Place the Jalapenos in a colander and put just a couple drops of vegetable wash on them and mix around to cover the Jalapenos in the wash. Rinse thoroughly! Lay the Jalapenos face down on paper towels to dry.

Let the Jalapenos and the cream cheese rest for 30 mins. Preheat oven to 400 degrees.

Take the softened cream cheese and place in a mixing bowl. Combine the  Jerk seasoning and squeeze one lime into the mix. After it is mixed well, crumble up the crispy bacon and fold it into the mix.


There are two ways of putting the mix into the Jalapenos. We like to use a pastry bag and pipe it into the jalapenos. You can also form small round sick of cream cheese with your hand and place them in the cavity of the cut jalapeno.

Place the Jalapenos on a cookie sheet and bake for 7-10 minutes or until the Jalapeno skin has just begun to darken and the cream cheese has a nice crust.
